The Story
Samani is where you eat Georgian food the way it was meant to be eaten — unhurried, generous, with wine poured by the jug. The kitchen makes khinkali properly (by hand, never frozen), the lobiani is honest, and the mtsvadi — meat on a skewer over live coals — is the reason you ordered it.
The setting is Kazbegi: simple, mountain, the Gergeti church visible if you step outside. The food is the food that people have been eating in this valley for centuries.
Philosophy
How we work.
Khinkali made by hand — never frozen, never rushed
Local Georgian wine — from Kakheti, poured generously
Mountain meat — what the season and the valley produce
Signature Dishes

Khinkali
The Georgian dumpling — filled with spiced meat and broth. Hold by the twist, bite a hole, drink the broth first. Then eat the rest.

Mtsvadi
Pork or beef skewer over live coals — the mountain feast. Order with Georgian mustard and fresh bread.

Lobiani
The spiced bean bread of the Caucasus — Georgian fast food elevated. Best here in the mountain cold.
The Feeling
Feels like
A Georgian feast — generous portions, wine in a jug, the mountain outside.
Best time
Dinner — after the day's hike
Music
Georgian conversation and the sound of the mountain valley.
Perfect for
The CinCin Notes
Order more khinkali than you think you need — you'll finish them. Add the lobiani. Get the local wine even if it comes in a jug. This is Kazbegi eating: honest, mountain, completely satisfying.
Budget in Georgian lari is around ₾40–60 per person, which is almost nothing. Eat well.
