Dinner is served in the former courtroom. Upstairs are rooms in the old villa; more are spread across a modern wing and the former caretaker’s house. LA MAISON stands on Prälat-Subtil-Ring in the middle of Saarlouis. Its core is a 19th-century town palace that once housed the higher administrative court, restored by the Saarlouis architects CBAG.studio; behind the buildings lies a park of mature trees. There are 50 rooms and suites, a spa of around 2,000 m² and, besides LOUIS, the French bistro PASTIS with its glazed conservatory.

Architecture & Design
A 19th-century villa and a new wing
The architects Christina Beaumont and Achim Gergen of CBAG.studio, who previously worked for Zaha Hadid and Rem Koolhaas, restored the old court building and set a plain, modern wing beside it.

The Hotel Park
Behind the villa, the old trees have been kept as a small woodland park, with a terrace and a circular path. It separates the hotel from the town and links the villa, the new wing and the guesthouse.

Suite La Maison
One of three themed suites in the historic villa, each around 44–50 m² for two, and the one that carries the hotel's name. A good choice if you want to sleep in the old court building rather than the new wing.
Suite Chocolat
The second themed suite in the villa, with high ceilings and fine fabrics.
Suite Ratatouille
The third themed suite in the villa, with a French theme.
Suite Étoile
A ground-floor suite in the guesthouse, a few steps from the villa, with its own terrace and whirlpool. As in all guesthouse rooms, there is no air conditioning.
Conni Kotte Suite
A first-floor suite in the guesthouse with its own balcony, furnished by the Hamburg interior designer Conni Kotte. Like the rest of the guesthouse, it has no air conditioning.
Villa Room
Double rooms in the restored villa, the former higher administrative court. They are the rooms to book if you want the historic building without taking a suite.
Saarlouis was founded in 1680 by Louis XIV as a fortress town and still carries his name. It lies close to the French and Luxembourg borders. LA MAISON is at Prälat-Subtil-Ring 22, a short walk from the old town. Saarbrücken Airport (SCN) is about 35 km away, Saarlouis station 2.1 km and the nearest bus stop 0.8 km.
Günter Wagner is the owner and managing director. Born in Saarland, he spent almost three decades co-running the family business Wagner Tiefkühlprodukte. He wants LA MAISON to bring together business and leisure travellers, food lovers from further afield, neighbours from France and Luxembourg and the people of Saarlouis; the spa is the latest addition.

LOUIS restaurant
In the former courtroom, with a terrace onto the park. Head chef Sebastian Sandor cooks modern food built on classic technique, served in a relaxed room despite the level of the cooking. Two MICHELIN stars and nine pans in Gusto, both 2026.
PASTIS bistro & delicatessen
Under head chef Taoufik Bakrine, the bistro with its glazed conservatory serves French bistro classics, international dishes and a plat du jour at lunch. Next door, the PASTIS delicatessen sells dishes from the hotel kitchen and a selection of wines to take away. Five pans with a bonus arrow in Gusto 2026.

Klaus Erfort cooks French-leaning tasting menus in a neoclassical villa in Saarbrücken: Breton lobster with chanterelles, say, or roe buck with celeriac and cassis. A few house classics, such as the truffled Bresse chicken for two, are made only to order.

Villa Fayence
Suzanne and Bernhard Michael Bettler have run this old villa in its own park since 1986. The conservatory looks out onto the trees and serves Mediterranean and home-style dishes; the “Cave Fayence“ bistro does French classics at the bar; in winter there is a fire in the drawing room, and in summer tables go out onto the terraces in the park.

Buchnas Dorfküche
The restaurant of Buchna's country hotel sits close to the treetop walk above the Saar loop. Christian Münch-Buchna runs the kitchen and Celine Weisse has cooked here since 1996, using herbs and flowers from her garden: Saarland and Lorraine dishes such as trout meunière or venison-and-potato pockets on cider sauerkraut, steak frites on Thursdays, a Sunday roast and cake in the afternoon.
