At La Sultana Oualidia, terraces and dining decks face the lagoon. There are twelve rooms and suites, each with an outdoor hot tub, though the views differ by category.
The hotel is built from local stone and keeps a low profile on the shore of a lagoon that is protected as a Ramsar wetland. Even its address points to its neighbours: Parc à huîtres N°3, oyster park number three. Oysters have been farmed here since the 1950s.
Choose the view
Every room and suite has its own terrace with a wooden deck, loungers and a hot tub, but not every one faces the lagoon. The Panorama Rooms (30 m²) and Panorama Suites (50 m²) look over the garden and countryside. The Lagoon Suites (55 m²) face the water, as does the Treehouse Suite, 40 m² set in a tree. The Ocean Suite (75 m²) takes up the top floor, with views over the lagoon to the ocean, an outdoor shower and its own lift.

Three places to eat
Lunch is at La Table de La Plage, on the beach: sea bass baked in a salt crust, lobster, oysters, bouillabaisse and grilled dishes. It is the only one of the three that outside guests can book. From late afternoon, Jan Janz, a thatched pavilion above the lagoon, serves cocktails with Moroccan spices and Asian-influenced dishes. Dinner is at La Table de La Sultana, for hotel guests only: Moroccan cooking with a French touch, indoors or outside depending on the weather. Vegetables come from the hotel’s own garden, and the cellar holds more than 3,000 bottles.

On and beside the water
An outdoor pool opens towards the lagoon, and there is a heated indoor pool. The spa is a stone building with vaults open to the sky, with a hammam and massages using plants and essential oils; there is also a gym and a padel court. The lagoon runs for about 12 kilometres and draws large numbers of birds. The hotel arranges birdwatching by kayak, stand-up paddleboarding, surfing near the lagoon mouth and visits to the oyster beds followed by lunch. On land there are horse rides on the beach and fat-bike rides to the salt marshes.

An oyster farmer with a restaurant and five guest rooms right among the lagoon's oyster beds. The oysters come from its own Parc 007, raw or lightly cooked, alongside lobster, spider crab, local fish and vegetables from the permaculture garden, served on a big shaded terrace above the water.

Open daily, noon to 11 pm without a break; booking recommended. At weekends and on public holidays, reservations are for dinner only, from 8 pm. The oyster park next door does a simple tasting – oysters and lemon – daily from 9.30 am to 6 pm.
A small house with a palm garden on the lagoon shore, just north of the village. Lagoon seafood comes to the table – grilled lobster, oysters gratin – with candlelit dinners under the thatched paillote; by day you can also just drop in for coffee in the garden.
