Inside the old fermentation tank, where wine once aged, sits the intimate restaurant — beneath vaults of limestone and pumice, a product of the still-active volcano. Chef Giuseppe Raciti cooks a Sicilian cuisine that draws on the honesty of its products and retells tradition in a modern key. In summer the gourmet restaurant moves to the terrace above the citrus grove.

From Winery to Hotel
Architecture by Antonio Iraci
ZASH grew out of the restoration of an old manor house and winery between Mount Etna and the Ionian Sea. Architect Antonio Iraci, with Carla Maugeri, followed the spirit of the place: a rural country house whose traces of the past — lava-stone walls, dusty plasterwork, wooden wine presses — are deliberately left visible, set in contrast to the contemporary work.
Large floor-to-ceiling glass walls dissolve the line between inside and out, until the citrus trees themselves become the walls of the rooms. Oak floor boards, vast volcanic-stone cladding and a restrained, precise design are the only additions. In 2013 the hotel received the PIDA International Architecture Award (Ischia) for excellence in architecture in hospitality.

Giuseppe Raciti
One Michelin star since 2019
At 22, Giuseppe Raciti cooked under Maestro Santin (2 Michelin stars), and a year later with Massimo Mantarro at Principe Cerami in Taormina (2 stars). In 2014 he took over the ZASH kitchen. Recognition followed — best young chef in southern Italy, a place among the Bocuse d'Or finalists in 2016 and 2017 — and in November 2019 the first Michelin star, which the restaurant has held ever since.
His cooking puts Sicily centre stage: charcoal-grilled tuna ventresca with smoked aubergine, grapefruit, red onion and teriyaki; seared lobster with vanilla mayonnaise, caramelised peaches and basil; a crisp poached egg with velvety squash, Maiorchino fondue and Etna porcini. Tradition, invention and terroir in one unmistakable signature.

The Spa: Lava and Water
Mediterranean and volcanic nature
Nothing here is left to chance: the pool is made of Etna lava stone, dark and powerful. Bare feet touch water and wood, while the warmth of intimate spaces meets the aromas of the island. In this private retreat, Mediterranean and volcanic influences combine into a wellness experience that belongs entirely to this place.
The wellness area, free for hotel guests, includes a sauna, Turkish bath, emotional shower and a pool with air-bubble massage. Massages and beauty treatments for face and body are available on request — and two of the pool villas bring the spa into the intimacy of your own refuge, with a private sauna and hammam.

The Citrus Garden
130,000 m² between lava and sea
Around the house lie 130,000 square metres of garden and citrus groves — grown on the "sciara", the cooled lava of Mount Etna, where Arab citrus and Greek olive trees thrive side by side. The paths between the rows are not only for walking: you pick oranges and tangerines and enjoy them right there in the garden, or as fresh juice.
With its pool and solarium, a former 140 m² wine cellar and a terrace overlooking the landscape, ZASH is also one of Sicily's most sought-after settings for private events and destination weddings — the pool, the orchard and the winepress rooms can all be given over to the occasion.

ZASH lies near Archi above Riposto on Sicily's eastern coast — where the "sciara", the cooled lava of Mount Etna, meets Arab citrus groves and Greek olive trees. The beaches are just 1.7 km away, the harbour of Riposto 3.6 km. Catania and its airport are about 45 minutes to the south, Taormina and Etna's northern slope (Piano Provenzana) each a little over half an hour away. All around: the Alcantara Gorges, the baroque towns of Catania and Acireale, the wines of Etna and lively Taormina.
